Overview

Paddy straw mushroom (Volvariella volvacea) is a traditional tropical species grown widely across warm, humid regions. It is one of the fastest mushrooms to grow, moving from spawning to harvest in a matter of days.

Growing conditions

It thrives in heat, fruiting at about 30 to 35°C on pasteurised rice straw, which makes it a natural fit for the Indian monsoon. High humidity and warmth are essential, and it does not need cooling.

In the kitchen

Paddy straw mushroom is picked young in the egg stage and has a soft texture and mild taste common in many South and Southeast Asian dishes. It is very perishable, so eat it fresh and cook it fully.

Grower tips

It matures fast, so harvest on time or the veil breaks and quality drops. Its speed and heat tolerance make it a strong monsoon crop.
