Overview
Enoki (Flammulina velutipes) is a cool-season mushroom with a mild, slightly fruity taste. In the wild it forms small golden-brown caps, while the pale, long-stemmed clusters sold in shops are grown in cool, high carbon dioxide conditions.
Growing conditions
Colonise supplemented sawdust at 18 to 24°C, then fruit cool at about 10 to 15°C. To grow the familiar long white stems, restrict fresh air so carbon dioxide builds up and the stems stretch toward the light, then let them lengthen in a collar or bottle.
In the kitchen
Enoki has a crisp texture and mild flavour that suits soups, hotpots, and stir-fries. Trim the base and cook it briefly but fully.
Grower tips
Enoki needs genuinely cool conditions, so it suits winter or a cooled space. The shape you get depends entirely on temperature and fresh air.
