What moisture level should my substrate be?

Most bulk substrates fruit best at about 60 to 70% moisture. A simple field test is the squeeze test: a firm squeeze should release a few drops of water but not a stream. Too wet and it turns anaerobic and sours; too dry and the mycelium stalls. Grain spawn is drier, around 45 to 55%, so it shakes apart cleanly.
