Can I grow shiitake in a warm climate?
Shiitake prefers cooler conditions, so in warm parts of India it usually needs a cooled room to fruit well. It colonises at 20 to 27°C but fruits best around 10 to 18°C, and a cold water soak helps trigger it. In hot months, most warm-climate growers pause shiitake and switch to pink oyster or milky mushroom, returning to shiitake in winter.
