Lion's mane and king oyster are the natural next steps once you are comfortable with oysters, because they use similar sterilised sawdust blocks and reward slightly tighter conditions. Shiitake is a good third project if you can keep things cool. Save cordyceps for when your sterile technique is solid, since it needs full lab conditions.
