When should I harvest my mushrooms?

Pick most mushrooms just before or as the caps finish opening, while the edges are still slightly curled and before they drop spores. For oysters, harvest the whole cluster when the largest caps flatten but before they turn wavy. Lion's mane is best while still white and firm, before the spines grow long. Harvesting on time gives the best texture, shelf life, and flavour.
