How do I harvest mushrooms without damaging the block?

Harvest a whole cluster at once by gripping the base and twisting gently, or cut it cleanly at the base with a sharp, clean knife. Take the entire cluster rather than picking individual caps, which leaves stumps that can rot. Keep the block clean and rehydrate it if needed, and it will usually produce another flush after a short rest.
