How do I dry mushrooms for storage?
Dry mushrooms in a dehydrator or a warm, airy spot at about 40 to 55°C until they are cracker-dry and snap rather than bend. Slice thick mushrooms first so they dry evenly. Once fully dry, store them in an airtight jar away from light, ideally with a desiccant sachet. Properly dried mushrooms keep for a year or more and rehydrate in warm water.
