Why are my mushrooms growing long stems and small caps?

Long stems and small or undersized caps almost always mean too much carbon dioxide and not enough fresh air. Increase air exchange by fanning or venting more often, and add light if the chamber is dim. Oysters show this fastest. Keep humidity up while you raise air exchange so the extra airflow does not dry the pins.
