What humidity do mushrooms need?

Most mushrooms fruit best at about 85 to 95% relative humidity. Lion's mane and some delicate species like the higher end near 90 to 95%. Too little humidity and pins abort or caps crack and dry; too much standing water invites bacteria. Mist surfaces and the air rather than the mushrooms directly, and pair humidity with fresh air so surfaces stay damp but not wet.
