What temperature do mushrooms need to fruit?
It varies by species. Many gourmet mushrooms incubate at 20 to 24°C and fruit a few degrees cooler. Oysters commonly fruit from about 15 to 24°C depending on the strain, lion's mane around 18 to 24°C, and shiitake and king oyster prefer a cooler 10 to 18°C. Warm-climate species such as pink oyster and milky mushroom fruit happily at 25 to 32°C.
