What grain is best for making spawn?

Rye is a classic all-rounder because it holds moisture well and separates cleanly, but wheat, sorghum (jowar), and millets such as bajra also make excellent spawn and are widely available in India. The key is cooking each grain to the right moisture, around 45 to 55%, so it is hydrated but not split or sticky. Whole grains work better than cracked or polished ones.
