Why should mushrooms be cooked and not eaten raw?

Cultivated gourmet mushrooms should be cooked because their cell walls contain chitin, which is tough to digest raw, and cooking makes their nutrients more available and the texture more pleasant. Some mushrooms also contain compounds that heat breaks down. Cooking simply makes them safer to digest and better to eat. This applies to oyster, lion's mane, shiitake, and the rest.
