Should I wash mushrooms before cooking?

Wipe cultivated mushrooms with a dry or barely damp cloth rather than soaking them, because they absorb water and then steam instead of browning in the pan. Clean, cultivated gourmet mushrooms rarely need more than a wipe. If you must rinse them, do it quickly just before cooking and pat them dry. Never eat gourmet mushrooms raw.
